Easy Cream Cheese and Spinach Roll Ups
Wednesday, May 16, 2007 at 07:28AM These are good for when you need something that looks more fancy than crackers and cheese, but takes just about as much time and thought .
- Several flour tortillas, either plain, sun-dried tomato flavored or spinach flavored.
- Flavored cream cheese (I use Arla Buko Whipped Cream Cheese, Garlic and Herbs flavored.)
- Fresh spinach
Spread tortillas with cream cheese. Place spinach leaves in a single layer on top to cover the cream cheese. Roll up the tortillas, wrap in plastic wrap and refrigerate for a couple of hours or until serving time. Slice each tortilla roll into 1-inch thick pieces, place pieces cut side up on a platter and serve.
Variations:
- Egg Salad and Spinach Roll Ups—Substitute egg salad for the cream cheese.
- Tuna and Spinach Roll Ups—Substitute tuna salad for the cream cheese.
- Ham and Spinach Roll Ups—Place a layer of thin sliced deli ham between the cream cheese and the spinach.

I love roll ups! Had one called Basil Cashew Chicken for lunch. It had a spicy Thai sauce. Oh was that good!
The Egg Salad Spinach one sounds delicious. I am going to have to try that one.
The ham and spinach with cream cheese sounds really good. Seems like this would be a great fix-ahead appetizer; great for parties. Thanks!
